Friday Food Faves: Peanut Butter

Peanut butter.  Salty, creamy, deliciousness! Enough people love peanut butter that there is even a website for dedicated fans– Sure, there are some haters out there- mostly the texture fanatics who can’t stand it when that gooey, thick substance gets stuck to the roof of their mouths– but they are truly missing out on a delicious and nutritious treat!

Peanut butter is one of the healthiest snacks out there (in moderation of course). It’s full of protein, Vitamin E, magnesium and other nutrients. It does contain fat, but fortunately 80% of the fat is unsaturated (the good kind). Many medically approved weight-loss and diabetic diets include peanut butter!

I happen to love peanut butter. One of its best uses is for when you’re starving, but about to go on a run or do something physical and don’t want to cramp up– grab a spoonful of peanut better and trust me, you’ll feel instantly full until you have more time to eat. It’s also great for after a workout when you’re exhausted and don’t feel like cooking anything right at first. This will hold you over until mealtime!

Peanut butter also works great as an addition to actual meals. For this entry’s recipe selection, I turned to the site- I figured they would be the experts on this subject!  They have a whole recipes section and some of the creations definitely caught my eye– (Americana Peanut Cheesecake, Peanut Butter Maple Syrup, or Chinese Chicken Salad with Ginger Peanut Dressing).

From Williams-Sonoma, try a peanut butter panini with bananas and honey. This recipe even has you make your own peanut butter!

In other news…

Quick reflection on Top Chef last night- How surprised were you about Dale’s send-off? I felt horrible for him. Two weeks in a row where the judges’ decision has shocked me!

Also- tickets are now on sale for Bon Appetit’s Vegas Uncorked. Doesn’t look like it’s in the cards for me to go this year, but the events look spectacular and entertaining.
