Giada’s Spaghetti with Pinot Grigio and Seafood

This past Saturday I spent a much-needed night in with my boyfriend and tackled a recipe his grandmother had shared with him- Giada’s Spaghetti with Pinot Grigio and Seafood via the Food Network website.

I really enjoyed this recipe- it was super simple and took about an hour to make. We opted to leave the clams out (they can be expensive and my boyfriend isn’t a huge fan) and it still turned out really well.

First you chop the shallots and garlic and soften them in a skillet with olive oil while preparing the spaghetti pasta in a large pot. You add the sun dried tomatoes to the shallots and garlic and cook for another minute before adding the dry white wine and shrimp (peeled and de-veined).

Cover and cook for about seven minutes or until shrimp is pink.  Mix the sauce with the strained spaghetti.

Add two cups of arugula. Mix gently.

And voila! Serve with a glass of white wine and you have yourself one delicious (and simple) meal!
