Crock Pot Beef Bourguignon + Cuisinart Multicooker

Recently bought a beaut’ of a new crockpot:

I had a Williams-Sonoma gift certificate that was just burning a hole in my pocket, and they happened to be running a huge discount special on their electronics! The Cuisinart Multicooker is one hell of a deal. Not only can it slow cook, but it can roast, sear, saute/brown, and steam! There are multiple settings under the slow cook option too: high, low, simmer, or warm.  There is even an automatic warming function that keeps your food nice and hot for you after it’s done cooking! The WS store representative recommended this even over the all-clad option (a rare occurrence in the world of cooking).

For our inaugural use of the cooker, we opted for this Food.com beef bourguignon recipe that I had actually found on Pinterest. It looked simple enough:

  • 6 slices bacon
  • 3 lbs beef round steak, cut into cubes
  • 1 large onion, peeled and sliced
  • 1 carrot, peeled and sliced
  • 3 tablespoons flour
  • 1 (10 ounce) can beef broth
  • 1 tablespoon tomato paste
  • 2 garlic cloves, minced
  • 1/2-1 teaspoon thyme
  • 1 whole bay leaf
  • 1/2 lb white pearl onion, peeled
  • 1 lb fresh mushrooms, sliced
  • 1/2 cup Burgundy wine

Directions: 1 Cook bacon in large skillet until crisp. 2 Remove from pan and drain. 3 Add beef cubes to the same pan and brown well. 4 Place browned beef cubes in crock pot. 5 Add onion slices and carrot slices to skillet. 6 Add tomato paste, thyme and minced garlic. 7 Season to taste with salt and pepper; stir in flour. 8 Add broth and mix well. 9 Add this mixture to the crock pot over the beef. 10 Add bay leaf and pearl onions. 11 Crumble cooked bacon and add to crock pot. 12 Cover and cook on LOW for 8-10 hours. 13 Saute mushrooms and add to crock pot with wine about 1 hour before serving.

I recommend adding in more broth and maybe 1/4 cup of water if you’re able to keep an eye on it throughout the day. That’ll help keep the meat tender and keep the sauce at a good consistency.
